Candied Orange Yogurt Parfait (Print)

# Directions:

01 - In a medium saucepan, combine sugar and water. Bring to a simmer over medium heat, stirring until sugar dissolves completely. Add orange slices in a single layer and simmer gently for 12-15 minutes, turning occasionally, until rinds become translucent. Carefully transfer orange slices to a parchment-lined tray and allow to cool completely for about 10 minutes.
02 - In a mixing bowl, combine Greek yogurt with honey if using and vanilla extract. Mix until smooth and well combined.
03 - Spoon a layer of yogurt into the bottom of each glass or jar. Add a layer of granola and a few pieces of candied orange. Repeat layers, finishing with yogurt and arranging candied orange slices on top. Sprinkle with extra granola and toasted almonds. Garnish with mint leaves if desired.
