# Directions:

01 - Combine lentils and vegetable broth in a medium saucepan. Bring to a boil, then reduce heat and simmer uncovered for 20 to 25 minutes until lentils are tender but retain shape. Drain and set aside.
02 - Heat olive oil in a large deep skillet over medium heat. Add onion, carrots, and celery. Cook for 6 to 8 minutes, stirring occasionally, until softened.
03 - Stir in minced garlic and cook for 1 minute until fragrant.
04 - Add crushed tomatoes, tomato paste, oregano, thyme, red pepper flakes, salt, and black pepper. Bring the mixture to a simmer.
