01 - Line an 8x8-inch baking pan with parchment paper.
02 - In a large mixing bowl, combine rolled oats, almond butter, honey, melted butter, vanilla extract, and salt. Stir thoroughly until incorporated. Press mixture evenly into the prepared pan and refrigerate while the gummies are prepared.
03 - Pour fruit juice into a small saucepan. Sprinkle gelatin over the juice and let sit for 5 minutes. Warm gently over low heat, stirring continuously until the gelatin fully dissolves. Mix in honey and transfer to a small baking dish lined with parchment paper. Refrigerate for 45 to 60 minutes until firmly set.
04 - Once set, remove the gummies from the dish and slice into small cubes.
05 - Take the oat base out of the refrigerator. Scatter homemade gummy cubes, freeze-dried fruits, and freeze-dried candy evenly over the surface. Gently press the toppings into the base.
06 - Return the pan to the refrigerator for an additional 10 to 15 minutes to set.
07 - Lift the bars out of the pan using the parchment paper. Use a sharp knife to cut into uniform bars.
