# Expert Advice:

01 -
  • It takes less time than waiting for the grill to heat up, and tastes like you spent all afternoon on it.
  • The herbs and garlic soak right in, so every bite has flavor without feeling heavy.
  • You can serve it warm, cold, or somewhere in between, and it still works.
02 -
  • Don't slice the zucchini too thin or it'll turn to mush, half an inch is the sweet spot for staying intact.
  • If your grill is too hot, the outside will char before the inside softens, so dial it back if you see blackening in under two minutes.
  • Marinating for longer than 10 minutes doesn't help much, the zucchini won't absorb more flavor and it can start to get soggy.
03 -
  • Brush the grill grates with a little oil before you start so the zucchini doesn't stick and tear when you flip it.
  • If you're grilling a big batch, keep the cooked pieces on a warm platter loosely covered so they stay tender while you finish the rest.
  • Use a grill basket if your slices are on the smaller side, it saves you from losing pieces through the grates.
