# Directions:

01 - In a mixing bowl, blend soy sauce, sesame oil, brown sugar, minced garlic, grated ginger, and gochujang. Add the sliced beef, chicken, or tofu; toss thoroughly to coat. Cover and marinate for 15–20 minutes.
02 - Using a blender or food processor, combine cooked ube, sour cream or yogurt, lime juice, honey or maple syrup, and a pinch of salt. Blend until smooth and evenly colored. Chill in the refrigerator until ready to serve.
03 - Heat a skillet or grill pan over medium-high. Add marinated protein and cook for 4–6 minutes, stirring as needed, until browned and fully cooked. Remove from heat and set aside.
04 - Warm the tortillas in a dry skillet or microwave until soft and pliable. If using rice bowls, fluff cooked rice and keep warm.
05 - For tacos, spread a spoonful of ube crema onto each warm tortilla, top with protein, then layer with kimchi, cabbage, cucumber, jalapeño, cilantro, sesame seeds, and pickled onions. For bowls, start with rice, add toppings, and drizzle with ube crema.
