01 - 1 lb ground beef or ground turkey

05 - 1 can (14 oz) diced tomatoes, drained
06 - 1 can (14 oz) black beans, drained and rinsed
07 - 1 cup corn kernels, fresh, frozen, or canned and drained

# Directions:
01 - Preheat oven to 350°F. Grease a 9 x 13 inch baking dish.
02 - In a large skillet over medium heat, cook ground beef or turkey until browned. Drain excess fat if needed.
03 - Add finely chopped onion, minced garlic, and diced bell pepper to the skillet. Sauté for 3 to 4 minutes until softened.
04 - Stir in drained diced tomatoes, rinsed black beans, corn kernels, taco seasoning, salt, and black pepper. Cook for 3 to 4 minutes to heat through, then remove from heat.
05 - Spread a thin layer of the meat mixture on the bottom of the baking dish. Layer with 3 lasagna noodles, one-third of the remaining meat mixture, one-third of the shredded cheddar and mozzarella cheeses, and some dollops of sour cream. Repeat layering two more times, ending with cheese on top.
06 - Cover the dish with foil and bake for 25 minutes.
07 - Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
08 - Allow to rest for 10 minutes before slicing. Garnish with sliced jalapeños, chopped cilantro, and sliced green onions if desired.
