01 - 2 large cucumbers, thinly sliced (peel optional)
02 - 2 green onions (scallions), thinly sliced

03 - 1/2 cup plain Greek yogurt (or sour cream as alternative)
04 - 2 tablespoons mayonnaise
05 - 1 tablespoon fresh lemon juice
06 - 1 teaspoon Dijon mustard
07 - 1 clove garlic, finely minced
08 - 1 tablespoon rice vinegar
09 - 1/2 teaspoon kosher salt
10 - 1/4 teaspoon freshly ground black pepper

11 - 2 tablespoons everything bagel seasoning
12 - 1 tablespoon fresh dill, chopped (optional)
# Directions:
01 - Rinse cucumbers and green onions under cold water. Trim ends of cucumbers and thinly slice them; peel if preferred. Thinly slice green onions and transfer both to a large mixing bowl.
02 - In a medium bowl, whisk together Greek yogurt (or sour cream), mayonnaise, lemon juice, Dijon mustard, minced garlic, rice vinegar, kosher salt and black pepper until smooth and homogenous.
03 - Pour the dressing over the sliced cucumbers and green onions. Using salad tongs or a large spoon, toss gently until the vegetables are evenly coated.
04 - Sprinkle everything bagel seasoning over the dressed cucumbers and toss lightly to distribute the seasoning without bruising the vegetables.
05 - Adjust seasoning to taste. Garnish with chopped dill if using. Serve immediately for maximum crunch, or refrigerate for 10 minutes to allow flavors to meld.
