- Dissolve granulated sugar in warm water within a large mixing bowl. Sprinkle active dry yeast over the surface and allow to sit for 5 minutes, until foamy.
- Add softened unsalted butter, fine sea salt, Flamin’ Hot seasoning, and bread flour to the bowl. Mix thoroughly until a sticky dough is formed.
- Knead by hand or with a stand mixer equipped with dough hook for 8 to 10 minutes, until dough is smooth and elastic.
- Transfer dough to a greased bowl, cover, and let rise in a warm environment for 1 hour or until doubled in size.
- Preheat oven to 425°F. Line a baking sheet with parchment paper.
- Punch down the risen dough and divide into 8 equal portions. Shape each piece into a tight ball.
- Fill a large pot with water and bring to a boil. Stir in baking soda.
- Using a slotted spoon, submerge each dough ball in boiling baking soda solution for 30 seconds per side. Remove and arrange on parchment-lined baking sheet.
- Brush each roll with melted butter. Sprinkle with Flamin’ Hot seasoning and coarse sea salt, then score the tops with a sharp knife.
- Bake in preheated oven for 16 to 18 minutes, until rolls are golden brown. Cool slightly before serving.
