# Directions:

01 - Preheat oven to 350°F. Line two baking sheets with parchment paper.
02 - In a large bowl, whisk together all-purpose flour, whole wheat flour, baking powder, sea salt, ground ginger, ground cinnamon, ground nutmeg, and ground cloves.
03 - In a separate bowl, whisk together mild olive oil or melted unsalted butter, unsulphured molasses, honey, and water until fully blended.
04 - Pour wet ingredients over dry mixture and stir until a cohesive dough forms. If dough feels too dry, gradually add 1–2 teaspoons extra water as needed.
05 - Transfer dough to a lightly floured surface. Roll out evenly to a thickness of 1/8 inch.
06 - Cut dough into squares, rectangles, or use festive cookie cutters. Arrange crackers on prepared baking sheets.
07 - Lightly brush the tops of crackers with water. Sprinkle with sesame or poppy seeds and flaky sea salt, if desired.
08 - Bake for 16–18 minutes, rotating trays halfway through, until crackers are golden and crisp.
09 - Transfer baked crackers to a wire rack and let cool fully before serving.
