- Unsulphured molasses: 1 tablespoon
- Honey: 1 tablespoon
- Water: 1/4 cup (60 ml) plus more as needed
- Sesame seeds or poppy seeds: 1 tablespoon (optional)
- Flaky sea salt: For sprinkling (optional)
Instructions
- Preheat & prepare:
- Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
- Mix dry ingredients:
- In a large bowl whisk together all-purpose flour whole wheat flour baking powder sea salt ginger cinnamon nutmeg and cloves.
- Combine wet ingredients:
- In a separate bowl whisk together olive oil (or melted butter) molasses honey and water until well combined.
- Make dough:
- Add wet ingredients to the dry mixture and stir until a dough forms. If dough is too dry add 1–2 teaspoons additional water as needed.
- Roll & shape:
- Transfer dough to a lightly floured surface. Roll out to 1/8-inch (3 mm) thickness.
- Cut crackers:
- Cut into desired shapes (squares rectangles or festive cookie cutters). Place crackers on prepared baking sheets.
- Topping:
- Lightly brush tops with water and sprinkle with sesame or poppy seeds and flaky sea salt if desired.
- Bake:
- Bake for 16–18 minutes rotating trays halfway until crackers are golden and crisp.
- Cool:
- Transfer crackers to a wire rack to cool completely before serving.
