01 - In a clean glass jar, dissolve organic cane sugar in filtered water, then add water kefir grains or ginger bug along with fresh lemon juice. Stir gently using a non-metallic spoon.
02 - Cover the jar with a breathable cloth or coffee filter secured with a rubber band. Allow to ferment at ambient room temperature (68–77°F) for 24 to 48 hours, until delicately fizzy and tangy.
03 - Remove the kefir grains or ginger bug using a fine mesh strainer. Discard or reserve starter for future batches.
04 - In a pitcher, combine the fermented soda base with fresh orange juice, lime juice, and mint leaves. Stir gently to incorporate.
05 - Fill glasses with ice cubes, pour the mocktail blend over, and garnish each glass with a thin orange slice and extra mint leaves as desired.
06 - Serve immediately for optimal effervescence.
