- Frosting: ⅓ cup (75 g) unsalted butter (softened), 1 ½ cups (180 g) powdered sugar, 2 tbsp lemon-lime soda, ½ tsp vanilla extract
- Coating & Decoration: 2 cups (340 g) white candy melts or white chocolate, ½ packet (20 g) soda-flavored powdered drink mix (orange, cherry, or grape), 2 tbsp soda-flavored hard candies (crushed, optional), 24 lollipop sticks, sprinkles or edible glitter (optional)
Instructions
- Prepare the Cake:
- Preheat oven to 350°F (175°C) and grease an 8-inch (20 cm) cake pan. Beat butter and sugar until fluffy. Add eggs one at a time, then vanilla.
- Mix the Ingredients:
- Whisk flour, baking powder, and salt in a bowl. Add dry ingredients to wet mixture alternately with soda, beginning and ending with dry. Mix until just combined.
- Bake:
- Pour batter into pan. Bake for 30–35 minutes until a toothpick inserted comes out clean. Cool completely.
- Form the Cake Pops:
- Crumble cooled cake. Beat butter, then add powdered sugar, soda, and vanilla for frosting. Mix frosting into crumbs until the mixture holds together. Roll into 1-inch balls and freeze for 20 minutes.
- Prepare Coating & Assembly:
- Melt candy melts or white chocolate and stir in drink powder for color and flavor. Dip lollipop sticks in coating, insert into cake balls, and freeze for 10 minutes. Dip each ball in coating, swirl, and tap off excess. Decorate with crushed candies or sprinkles. Set upright until firm.
