- Ripe bananas: 2 large, mashed
- Coconut oil: 2 tablespoons (or melted butter)
- Rolled oats: 2 cups
- Ground cinnamon: 1/2 teaspoon (optional)
- Salt: 1/4 teaspoon
- Semi-sweet chocolate chips: 1/2 cup
Instructions
- Prep:
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Mash and mix:
- In a large bowl, mash the bananas until smooth. Stir in coconut oil.
- Combine dry:
- Add oats, cinnamon if using, and salt. Mix until combined.
- Fold in chips:
- Fold in chocolate chips.
- Shape:
- Scoop heaping tablespoons of dough onto the prepared baking sheet. Flatten slightly with the back of a spoon.
- Bake:
- Bake for 12–15 minutes, until cookies are set and lightly golden on the edges.
- Cool:
- Cool on the baking sheet for 5 minutes. Transfer to a wire rack to cool completely.
